Fresh Pasta at Home by America's Test Kitchen
This is a really good cookbook for making fresh pasta at home. There are really good instructions for making several kinds of dough and also specifies whether it's dough for rolling out pasta or for a pasta extruder. It also goes over several types/shapes of pasta and how to make those. Then it gets into full recipes using fresh pasta including a specific chapter on filled pasta and baked pasta. The last chapter is all about sauces. Overall, a very detailed, yet beginner-friendly book on making fresh pasta at home.
