Zucchini Love by Cynthia Graubert
Zucchini is one of my favorite vegetables and it grows so well in my garden that I usually get a LOT. And while I love fried zucchini, I'm always looking for new ways to use this summer vegetable. Zucchini Love gives tons of great recipes for using zucchini in new and different ways. The author also includes tips on what recipes work best with what size zucchini. Everyone has found that hidden zucchini that went from perfect to giant overnight, so I think that is especially helpful. Recipes from fried zucchini to fritters, soup, breads, and even desserts are included. Even though I already use zucchini several ways I did find a few more recipes I'd like to try.
